Carbohydrates are the primary energy source that plays an essential role in biological systems, especially in the respiratory system. Carbohydrates are produced by the process of photosynthesis in green leafy plants. Carbohydrates can be energy, like glucose in human and animal tissue cells. Carrying carbohydrates by yeast or other microbes can produce CO2 , alcohol, organic acids, and other organic substances. In Indonesia, about 80% - 90% of energy needs come from carbohydrates. Staple foods are commonly eaten mostly contain carbohydrates such as rice, corn, sago tubers, and others. Some substances that belong to the carbohydrate group are sugar, dextrin, starch, cellulose, hemicellulose, pectin, gum, and others. The elements that make up carbohydrates consist only of carbon (C), hydrogen (H), and oxygen (O).
